  1. SYRUP – METHOD.
  2. Prepare syrup day before. It needs to be very cold.
  3. In a large pot, dissolve sugar in the water.
  4. Add spices and lemon juice and bring to the boil.
  5. Take off stove and leave to cool.
  6. Place in fridge overnight.
  7. DOUGH – METHOD.
  8. Sift flour, baking powder and salt together.
  9. Rub in butter amd mix til pliable.
  10. Add egg and mix.
  11. Add water a little at a time.
  12. Work dough well until no lumps. If sticky sprinkle a little flour and knead until dough will ball up.
  13. Let dough rest at room temp for approx 3 hours under inverted mixing bowl.
  14. TO PREPARE KOEKSISTERS.
  15. Roll out dough. Thickness 5mm.
  16. Cut into strips 6cm long.2cm wide.
  17. Plait strips and pinch hard at ends.
  18. Deep fry until golden brown.
  19. Remove and drain quickly.
  20. Dip in cold syrup.
  21. The secret is to keep the syrup cold and the koeksisters hot. This way it will draw in just the right amount of syrup.
  22. You can keep the syrup cold by keeping it in another container filled with ice water.

These are called koeksisters, but are not to be confused with the traditional South African, Dutch style plaited koeksister! This recipe was one that my grandmother used to make when I was a little girl. Koeksister is a traditional Afrikaner confectionery prepared by frying plaited dough strips in hot oil, then dipping it into ice cold sugar syrup or honey. The name comes from a Dutch word "koek", a wheat flour confectionery. Traditional koeksisters are made with buttermilk but to give it some extra South African flair; we've replaced the buttermilk with Amasi instead.
